Unfortunately you can’t stay in offline mode using gtalk as google has not given this feature in gtalk unlike yahoo messenger so you can’t services like this for gtalk.

The only way a person can be in invislbe mode is when he is using gtalk so if a person is in invisible mode in gtalk then the best way to find is to send him a message. Once when you click on the window, you will get a message like this -

but if the person is online, gtalk won’t show any message.

Earlier gtalk used to give warning that the user is offline and he can’t receive the message right now but I don’t think now gtalk gives any such message.
